Ingredients

 olive oil
 1 red onion
 200 g bacon
 50 g Parmesan cheeze
 2 tsp brown sugar
 2 tsp warm water
 1 tbsp balsamic vinegar
 1 bunch basil
 ½ cup tomato paste
 2 wholemeal pizza bases
 ½ tsp chilli flakes

Method

Preheat oven to 200°C. Finely slice the red onion. Dice the bacon. Finely grate the Parmesan cheese. Pick the basil leaves.

Heat a drizzle of olive oil in a fry pan and cook the red onion for 5-6 minutes or until softened. Add the brown sugar, warm water and half the balsamic vinegar. Cook for a further 3-4 minutes. Set aside.

Cook the bacon for 4-5 minutes until browned.

Combine tomato paste, a drizzle of olive oil and remaining balsamic vinegar in a small bowl. Season with salt and pepper.

Build pizzas and cook for 10 minutes directly on wire oven racks.
