Ingredients

 olive oil
 400 g potato
 1 bunch parsley
 1 garlic clove
 ¼ cup milk
 2 beef steaks
 3 tbsp balsamic vinegar
 1 bunch thyme
 1 beetroot
 1 carrot
 2 tbsp warm water
 2 tsp brown sugar

Method

Peel and chop potatoes. Pick parsley leaves. Peel and slice the garlic.

Place the beef steaks in a shallow dish with half of the balsamic vinegar, garlic and thyme sprigs. Season with salt and pepper. Toss in marinade and set aside.

Boil potatoes for 10-15 minutes until soft. Drain and return to the pan. Add milk and parsley. Mash until smooth. Season with salt and pepper. Cover to keep warm.

Grate the beetroot and carrot. Place in to a mixing bowl. Drizzle with olive oil and season with salt and pepper.

Cook the beef in a pan over a high heat for 1-2 minutes on each side.

To make the sauce, add any excess marinade to the pan along with remaining balsamic vinegar, warm water and brown sugar. Season with salt and pepper. Simmer then reduce heat to low and stir for 2 minutes until thickened.
