Ingredients

 olive oil
 1 garlic clove
 1 knob ginger
 1 bunch green beans
 1 carrot
 1 bunch Asian Choy Sum
 3 tbsp hoisin sauce
 1 tbsp soy sauce
 1 tbsp water
 250 g beef strips
 250 g Hokkien noodles

Method

Peel and grate the garlic. Peel and grate the ginger. Peel and cut the carrot in to matchsticks. Trim the ends of the Choy Sum.

Combine the garlic, ginger, hoisin sauce, soy sauce, 1 tbsp olive oil and water together in a small bowl.

Refresh the hokkien noodles for 1-2 minutes in hot water.

Heat a drizzle of olive oil in a wok over a high heat. Stir fry the beef strips for 1-2 minutes. Set aside.

In the same wok, add the green beans, carrot and Asian greens. Stir fry for 1-2 minutes until tender. Add the hoisin sauce mixture, beef and hokkien noodles and cook until heated through.
