Ingredients

 olive oil
 100 g bacon
 400 g cannellini beans
 50 g Parmesan cheese
 1 carrot
 1 garlic clove
 2 tsp Baharat Spice Blend
 1 tsp brown sugar
 2 tsp balsamic vinegar
 400 g diced tomatoes
 60 g baby spinach leaves
 2 ciabatta rolls

Method

Preheat oven to 200°C. Chop the bacon in to 1 cm pieces. Drain and rinse the cannellini beans. Finely grate the Parmesan cheese. Peel and finely dice the carrot. Peel and crush the garlic.

Heat a drizzle of olive oil in a large frying pan. Add the bacon and cook for 5-6 minutes, or until browned. Add the carrot, garlic and cannellini beans to the pan and cook for 4-5 minutes.

Add the spice blend and cook for 2 minutes. Add the brown sugar, balsamic vinegar and diced tomatoes. Stir to combine. Add the baby spinach leaves and stir until wilted. Reduce the heat to low and simmer.

Tear the ciabatta roll in to 2 cm chunks. Combine in a bowl with Parmesan cheese, a drizzle of olive oil, salt and pepper. Stir to coat.

Pour the baked bean mixture in to a medium baking dish and top with the bread chunks. Bake in the oven for 5-10 minutes or until golden and crunchy.
