Ingredients

 olive oil
 1 carrot
 1 zucchini
 100 g mozzarella cheese
 250 g beef mince
 ½ tbsp Baharat spice blend
 400 g diced tomatoes
 ¼ cup water
 1 tsp beef stock
 4 flour tortillas

Method

Preheat the oven to 200°C. Finely dice the carrot. Finely slice the zucchini. Grate the mozzarella cheese.

Heat a drizzle of olive oil in a fry pan over a medium heat and cook the zucchini and carrot for 5 minutes or until softened. Set aside.

Over a high heat, brown the beef then add the Baharat spice blend and cook, stirring, for 1 minute. Add the diced tomatoes, carrot, zucchini, water and beef stock. Season with salt and pepper. Reduce the heat to low and simmer for 5 mintues, or until thickened and fragrant.

In a baking dish, layer the beef mixture between tortillas until all the beef mix has been used. On the top, sprinkle with grated mozzarella cheese instead of a tortilla. Bake in the oven for 10 minutes.
