Ingredients

 olive oil
 3 cups boiling water
 1 knob ginger
 4 garlic cloves
 1 long red chilli
 1 tbsp sesame seeds
 1 tsp sesame oil
 250 g pork mince
 1 tsp Chinese five spice
 1 tsp chicken stock
 1 ½ tbsp soy sauce
 120 g ramen noodles
 60 g baby spinach leaves

Method

Peel and grate the ginger. Peel and crush the garlic. Slice the long red chilli.

In a fry pan, toast the sesame seeds for 3 minutes. Remove from the pan and set aside.

Add sesame oil and 1 tsp of olive oil to the pan along with pork mince. Cook for 5 minutes then remove and set aside.

Add the ginger, 1 tsp of the garlic and the Chinese five spice to the pan. Cook briefly until fragrant. Add the chicken stock, boiling water and soy sauce. Simmer for 3 minutes.

In a medium saucepan, add the chilli, remaining garlic and 1 tbsp olive oil and heat for 4 minutes or until the chilli and garlic are soft and fragrant.

Add the ramen noodles and baby spinach to the broth and cook for a further 2 minutes. Season with salt and pepper.
