Ingredients

 olive oil
 400 g chickpeas
 400 g pumpkin
 2 tsp Moroccan spice blend
 300 g diced beef
 1 ½ cups boiling water
 1 tsp beef stock
 2 tbsp tomato paste
 30 g baby spinach leaves

Method

Preheat oven to 200°C. Drain and rinse the chickpeas. Chop the pumpkin in to 2 cm chunks.

Place the chickpeas on an oven tray. Toss with olive oil and 1 tsp of spice blend. Season with salt and pepper. Bake for 15-20 minutes until golden.

Brown the diced beef for 1-2 minutes over a medium-high heat.

Heat a drizzle of oil in a saucepan over medium high heat. Add pumpkin and cook for 10 minutes, stirring occasionally. Cover with a lid and cook for a further 5 minutes or until the pumpkin is soft.

While pumpkin is cooking, combine the boiling water and beef stock in a jug. Once the pumpkin is cooked, add the tomato paste and remaining spice blend and cook for 1 minute. Pour in the stock and stir to combine. Add the beef and baby spinach leaves to the pan and stir until wilted.
