Ingredients

 olive oil
 400 g potatoes
 1 zucchini
 1 tbsp milk
 1 tsp rosemary
 1 garlic clove
 1 tbsp white wine vinegar
 2 tsp honey
 2 beef rump steaks
 1 bunch silverbeet

Method

Put a large saucepan of water on boil. Peel and roughly chop the potatoes. Dice the zucchini.

Boil the potatoes for 15 minutes. Drain, return to the pan and mash. Add milk and mix well. Season with salt and pepper.

Meanwhile, add a drizzle of olive oil to a fry pan. Add rosemary and garlic, cooking for 1-2 minutes. Add the white wine vinegar and honey and stir to combine. Season to taste with salt and pepper and transfer to a bowl.

Season the beef rump with salt and pepper on both sides and fry for 3 minutes on each side. Rest for 5 minutes, then slice in to thin strips.

While the beef is resting, add the zucchini to the same pan and cook for 5 minutes until golden. Meanwhile roughly chop the silverbeet and cook for 2 minutes.
