Ingredients

 olive oil
 1 chorizo
 1 carrot
 1 zucchini
 1 long green chilli
 1 garlic clove
 1 green capsicum
 1 tsp smoked paprika
 ¾ cup Jasmine rice
 1 tsp vegetable stock
 2 ½ cups water
 ½ lemon

Method

Thinly slice the chorizo. Peel and finely dice the carrot. Slice teh zucchini into half-moons. Finely slice the green capsicum. Finely chop the long green chilli. Peel and crush the garlic.

Heat a drizzle of olive oil in a fry pan over a medium-high heat. Add the chorizo and cook for 2 minutes. Add the carrot, zucchini, green capsicum, long green chilli, garlic and smoked paprika to the pan and cook for 2 minutes.

Add the rice to the same frying pan and stir for 1 minute until coated in the flavours.

Add the stock cube and water. Season with salt and pepper. Bring to the boil, then reduce the heat to low and simmer, stirring often, for 15-20 minutes, or until the rice is tender and the water has been absorbed.

Cut lemon in to wedges and squeeze juice over the dish just before serving.
