Ingredients

 olive oil
 1 garlic clove
 1 knob ginger
 1 red capsicum
 1 choy sum (or bok choy)
 265 g hokkien noodles
 50 g hoisin sauce
 3 tbsp soy sauce
 1 tsp brown sugar (or honey)
 1 tbsp water
 300 g beef strips

Method

Boil a kettle of water. Peel and finely grate the garlic and ginger. Slice the red capsicum into thin strips. Roughly chop the choy sum.

Place the hokkien noodles in a medium bowl and cover with boiling water. Stand for 6-8 minutes. Drain and set aside.

In a small bowl, combine the garlic, ginger, hoisin sauce, soy sauce, brown sugar, drizzle of olive oil and water. Stir to combine.

Heat a wok over a high heat and add olive oil. Stir fry the beef strips until browned. Remove the beef and set aside.

In the same wok, add the red capsicum and choy sum and cook for 1-2 minutes. Add the stir fry sauce, beef and hokkien noodles and stir fry until combined and heated through.
